Speaking of things being stolen… I think someone stole the sun from Florida this weekend. There were clouds in the sky. Both days of the weekend. And I’m talkin’ the real-deal clouds — overcast skies and all. I’m probably the only person in Florida to admit this, but the upstate New Yorker in me actually enjoyed it. It made things feel slightly more fall-like (minus the whole 90 degrees thing). Anyway…
Today I’ve got a delicious semi-homemade recipe for you. Because we all need semi-homemade recipes every now and then — boxed mixes are my friend. A few weeks ago we had a noon football game here, which meant an early tailgate — a breakfast tailgate! How fun, right? It was. And I brought these mini cinnamon bacon cheddar biscuits along.
These biscuits get started with Bisquick. You could make the dough from scratch if you’d like, but Bisquick has never steered me wrong, so I take the short cut. :)
I prepped the biscuit mix just as the box instructed, but added cinnamon, cooked and crumbled bacon, and shredded sharp cheddar cheese to the dough. And that’s it! Well, you’ll have to shape and bake the biscuits, but that’s a no-brainer, right?
These biscuits are perfect for breakfast, brunch, or even just as a snack. Or you could slice a couple in half and make egg sandwiches with them. I’m going to try that next time!
Cinnamon, bacon, and cheddar cheese make for a sweet and savory biscuit that’s perfect for breakfast or brunch. If you’d like, substitute chopped ham for the bacon, or switch out the cheddar cheese for your favorite cheese.
Makes about 2 dozen
Prep time: 20 minutes
Cook time: 8 minutes
- 2 1/4 cups Bisquick all-purpose baking mix
- 3/4 teaspoon ground cinnamon
- 2/3 cup low fat milk
- 3/4 cup shredded cheddar cheese
- 1/2 cup crumbled bacon (I used turkey bacon, but regular works too)
Heat the oven to 450 degrees F. Line a baking sheet with parchment paper.
In a large mixing bowl, stir the Bisquick, cinnamon, and milk until a soft dough forms. Stir in the cheddar cheese and bacon until mixed.
Turn the dough onto a floured surface to knead 10 times. Roll the dough to 1/2-inch thickness. Cut the dough with a 1 1/2-inch biscuit cutter (for mini biscuits; use a larger cutter for regular biscuits). Place the biscuits onto the prepared baking sheet.
Bake 6 to 8 minutes or until edges are golden brown.
