Banana Trail Mix Cookies

TGIH!  Is it just me or does this week seem to be flying by?  Actually, it seems like every week is flying by these days — before I know it, it’ll be Thanksgiving!

One sign that it definitely isn’t even close to being Thanksgiving yet — the fact that my apartment is a essentially a giant brown bag for ripening  bananas!  I swear, I buy bananas in the morning and by the evening they’re already getting spotted.  Which means I’ve been doing a ton of baking with them these days, including these banana trail mix cookies.

These cookies were definitely a spur-of-the-moment type of recipe for me — I was snacking on some trail mix while beginning to think about making banana bread, and the next thing I know, I’d combined the two!

The cookies themselves are like a cross between banana bread and monster cookies.  They’re soft and moist like banana bread, but completely loaded with nuts, seeds, dried fruit, and of course, M&Ms!

Now, what to do with my next batch of ripe bananas…

a cross between banana bread and monster cookies. UMMM. only my two favoritest things on the freaking PLANET!!! these cookies are like a dessert dream come true! they look unbelievably soft!

Ive been on such a banana kick the past few months but havent made cookies…not yet anyway!
