Hello, hello! I feel like it’s been forever since I last shared a recipe here, but I suppose that’s what two weeks across the pond in Europe will do. Speaking of, over the next couple weeks I’ll have to share a bunch of the places we visited here on the blog. I definitely have some “bucket list” worthy spots to share! But I’ll save that for another day. Today, its cookie time!
As soon as I was back in the states late last week, all I wanted to do was bake cookies. Well, actually, all I wanted to do at first was take a 24-hour nap — did I mention I had a 10-hour flight delay leaving London, after 2 hours of sleep the night before? Yeah… anyway, once I got myself out of sleep debt, I grabbed a cup of Chobani and got to work on a new cookie recipe.
I’ve been getting a lot of requests over the past month for oatmeal raisin cookies. I’m not sure how I didn’t already have a recipe for them on the blog, since they’re definitely one of my personal favorite cookies. Nevertheless, as the requests poured in I knew it was oatmeal CHOatmeal raisin time.
I’d say these were well worth the wait. They’re definitely my new go-to recipe for oatmeal raisin cookies… although next time, I may need to sneak a few chocolate chips in.
Enjoy!
Soft, chewy oatmeal raisin cookies made with Chobani Greek yogurt. For extra flavor, add chocolate chips and/or chopped walnuts in with the raisins. Makes 3 dozen cookies Prep time: 20 minutes Cook time: 15 minutes Heat the oven to 350 degrees F. Line two to three large cookie sheets with parchment paper. In a large mixing bowl, beat the butter and sugars (by hand or with electric mixer) until creamy. Add the eggs, yogurt, and vanilla extract; mix until smooth. Add the baking powder, cinnamon, oats, and flour; stir until just mixed. Stir in the raisins. Drop the cookie dough by rounded tablespoon onto the cookie sheets, about two inches apart. Bake 12 to 15 minutes or until the edges are golden brown. Allow the cookies to cool 5 minutes before removing from the cookie sheets to cool completely.
