Happy Monday! I hope you had a lovely weekend. Personally, I have a feeling I’m going to be suffering from a case of the Mondays today, since I just got back from a quick trip to Florida. It was actually the first time I had taken a vacation to the sunshine state in a few years… I should get back there more often.
Moving on… a few weeks ago, I found myself with an almost empty jar of Nutella. Any other fan of Nutella knows that you don’t just toss an almost empty jar of the chocolatey spread. I thought about just grabbing a spoon and eating the rest straight out of the jar, but instead I decided to grab some oats and make Nutella granola!
Every time I make granola, I vow to make it more often. It’s so simple, and seems to last me for days. This particular batch has hazelnuts in it as well (PS, if any Oregonians want to donate some of their delicious hazelnuts to me, I’ll gladly accept). I’ve been enjoying this granola over Greek yogurt, oatmeal, and just as a snack on its own!
Crunchy granola with a chocolate, nutty flavor from Nutella. Makes about 1 1/4 cups Prep time: 10 minutes Cook time: 30 minutes Heat the oven to 300 degrees F. Line a baking pan with parchment paper. In a small mixing bowl, stir the oats, Nutella, and honey until mixed well. Stir in the chopped hazelnuts. Spread the oat mixture into the prepared baking pan (you can keep some of the oats in clusters if you’d like). Bake 25 to 30 minutes, stirring occasionally, until the granola is crisp. Allow to cool completely before storing in an airtight container.

yum yum yum! I’ve been craving my nutella granola again lately… and you’ve convinced me to make another batch!! im going to try it with chopped hazelnuts next time. And i LOVE it over vanilla or plain greek yogurt!
Now you know what I meant when I said we think alike, right?! I’m added dried fruit to mine next time!

I made this last night but wasn’t measuring so I think I added more honey. and I added some coconut oil. It turned into almost like a granola brittle, I cut it into squares and its AMAZING
I like the idea of adding coconut oil to this, and I LOVE the idea of granola brittle.
