
Let’s review the year 2012 in NY weather thus far, shall we?
- January: Winter? where are you?
- February: Seriously, where’s the snow? We’re doomed in March…
- March: Helloooo summer!!
- April (first 3 weeks): Eh, I’ll tough out these allergies for an early, sunny spring
- April (past week): Aaapprilll SHOWERSSSSS!!!
I’m pretty sure it rained nonstop from last Saturday morning until yesterday. Dark, freezing cold, blustery winds, with intermittent hail… yuck. See what a mild, happy winter does to a girl in NY? It makes her think she lives in sunny CA or something!
When the other gets yucky, I make cookies. And when I realize I cannot shouldn’t subsist on cookies alone, I make soup. It’s warm, flavorful, and makes me completely forget that mother nature is being mean.
I made this soup the other night with the thought of spicy, southwestern foods and flavors. It’s full of grilled chicken, roasted bell peppers and tomatoes, corn, and rice. I call it fajita chicken and rice soup!
You know, I’ve never even had fajitas, but here I am naming my soup, fajita soup. I guess I should make some fajitas… maybe I can make them for Cinco de Mayo?
Or, I could just keep eating this soup…
Chili powder and cayenne pepper give this chicken and rice soup a spicy, smoky flavor. Serves 8 Prep time: 15 minutes Cook time: 30 minutes Chop the chicken into small pieces; set aside. In a large pot, melt the butter over medium-high heat. Add the diced pepper and cook until peppers are slightly charred and cooked. Add the tomatoes (do not drain), corn, black pepper, chili powder, cayenne pepper, and broth. Reduce the heat to low; bring to a boil, stirring occasionally. Add the chicken and rice. Simmer 10 to 15 minutes. Serve the soup with tortilla chips, if desired.

Ok – so we hit record high temperatures twice this week. 103 degrees in sunny Phoenix. Also we got rain for the first time in over 2 months yesterday for 25 minutes. But Jeff got me a massage and I slept right through it. I know… I shouldn’t complain, but I really wanted to see and feel the rain. The grass is always greener on the other side isn’t it? Oh well – I’m totally cranking down the AC and making this soup for dinner tomorrow night.
Yikes, 103 degrees! Glad it’s finally cooled down a bit, and if not, head to the pool! Enjoy the soup if you make it.
