Happy Monday! Actually, let’s make that Merry Monday – only one Monday ’til Christmas after today.
How was your weekend? Who went Christmas shopping?
It’s safe to say I’m doing a good job Christmas shopping for… myself. I was in NYC and well, it just wouldn’t be a trip to NYC without a little shopping for yourself, right? I promise this weekend I will go shopping only for others. And for cookie making ingredients. But cookie making ingredients count as shopping for others too, in my opinion.
Today’s cookie is a delicious one – one of my favorites yet! Ha, I think I’m saying that about all these cookies but I suppose they’re all just that good.
Anywho, have you ever had melty mints? Those creamy little Hershey Kiss shaped mint flavored candies with the little white sprinkles on the bottom? My grandma used to have a dish of them out year-round and I’m pretty sure I have probably eaten about 10 pounds worth of them over the years. Since grandma is gone now, I think it’s my duty to keep the love for melty mints alive. So what did I do?
Stuck ‘em into cookie dough, obviously.
If you can, eat these straight out of the oven. If not, just stick them in the microwave for 5-10 seconds before eating to get that delicious meltiness you see above.
Chewy, buttery sugar cookie cups with a melty mint candy in the middle. So many holiday flavors in one little cup! Makes 4 dozen mini cups Prep time: 15 minutes Cook time: 12 minutes Heat the oven to 350 degrees F. In a large mixing bowl, beat the butter and sugar with an electric mixer on high speed until fluffy. Add the eggs and vanilla and beat until mixed. In the same bowl, add the baking powder and salt and beat until mixed. Add the flour, 1/2 cup at at time, and beat on medium speed until mixed well. Roll the dough into 1-inch balls, then press each ball into an ungreased mini muffin cup pan. Bake 12 minutes or until edges are light golden brown. Immediately press a melty mint candy into the center of each cup. Allow the cookie cups to cool 10 minutes, then remove from pan and allow to cool completely.

I just made these, but I couldn’t find the melty mints in red and green, so I used mint truffle Hershey Kisses instead. They came out really good. Then I made your Chocolate Mint version of these cookies, but omitted the peppermint extract, and I put Candy Cane Hershey Kisses in the middle. That is my favorite combination! They came our really yummy. I love your 17 versions of the sugar cookie recipe.
