So, Halloween is days away and I’m just about candy corned out. Not from a daily snacking perspective — totally still loving candy corn as a snack. But from a baking perspective, I’m done with candy corn for the year. My baking mind has moved on to November… i.e., pumpkin!
Have you seen this pumpkin cookie mix in your grocery store this fall? My mom picked up this Betty Crocker mix for me a few weeks ago, and I’ve seen that Pillsbury makes one too (I may or may not have picked that one up…).
Whenever I’m working with a cookie or cake mix, 99% of the time, I try to make it my own by adding extra ingredients. I tried really hard to prepare these cookies according to the package instructions without grabbing anything else. I came this close…
Somehow oats and cinnamon chips jumped into the mixing bowl! I had no choice but to stir them in and make pumpkin oatmeal cinnamon chip cookies.
I sure am glad those oats and cinnamon chips found their way into these cookies. I mean, I’m sure a soft, spiced pumpkin cookie would have been great on its own… but I’m pretty sure a soft, chewy cookie bursting with sweet cinnamon chips is better. While we’re on the subject, I’m pretty sure cinnamon chips make everything better.
Oats and cinnamon chips are added to a simple packaged pumpkin cookie mix to make for a chewy, sweet and spiced cookie perfect for Fall — or any time of year! Makes 2 dozen cookies Prep time: 10 minutes Cook time: 25 minutes Preheat the oven to 350 degrees F. Line two large cookie sheets with parchment paper. In a large mixing bowl, combine the cookie mix, butter, egg, water, and oats. Beat with an electric mixer on medium speed until mixed well. Stir in the cinnamon chips. Form the cookie dough into one-inch balls and place on cookie sheet about two inches apart. Bake 10 to 12 minutes or until edges are golden brown. Allow to cool on pan 2-3 minutes, then transfer to wire racks to cool completely.

I have not seen that cookie mix in stores, then again I haven’t really been looking for it. I really like how you used it as a base for these cookies and added your own fillings, yum!
Oh, look for it! I’m sure I could make pumpkin cookies from scratch just as good/easily, but I always love finding limited edition things in the store, ya know?!

Ahhh cinnamon chips!! I haven’t had those since working at Great Harvest…and they weren’t paired with pumpkin. I want!

Ah, you don’t know what you’re missing!! They are usually in the baking aisle right with the other chips – SO good.
I almost always add extras to mixes to make it my own too! These look sooo delicious!
Oh these sound fabulous with the oats and chips! I might even use butterscotch chips since I can’t find cinnamon ones that aren’t processed with peanuts/nuts. Yum!

I made these this weekend – SO good! I’m going to use the leftover cinnamon chips in my next 2 ingredient pumpkin cake (cake mix + can of pumpkin).
