Did you know Wednesday is National S’mores Day?  Apparently the day to enjoy melty marshmallow and chocolate sandwiches is August 10th.  You can bet I’ll enjoy one on Wednesday!  But what kind?

I could have a cake batter s’more.  Because really, what could be more luscious than cake batter and melted marshmallow?  Except by adding white chocolate, as one reader suggested!

Of course, if I were feeling more ambitious I’d make my own graham crackers.  Spreading homemade graham crackers with two types of peanut butter will never hurt anyone, I promise (except those of you with peanut allergies – sorry guys!).

If you’re more in the mood for cake, you can still celebrate with a s’mores cake!  This recipe is a bit retrospective in the world of Little Bitty Bakes, but I remember ever delicious bite!

And finally, what you’re all wondering about – how about a sweet and salty s’more, with mango and dark chocolate?  And don’t reach for the graham crackers – reach for salty Triscuits!  Don’t raise your eyebrow at me, just go ahead and try it. 

Oh, and if you haven’t got mango butter, just use a few thin slices of mango!

Wishing you a happy and (not-so) healthy National S’mores Day!

Mango Triscuit S’mores

Makes as many as you want :)

  • Triscuits
  • Mango butter (or mango slices)
  • Marshmallows
  • Dark Chocolate

Spread each triscuit with mango butter (about 1 teaspoon on each cracker), then top with chocolate.  Toast marshmallows; place on top of chocolate.  Top with additional cracker.
