Are you a Larabar fan? I ate my first Larabars last fall while I was training for the NYC Marathon – they make great pre-run fuel. If you’ve never had one, I recommend grabbing one next time you’re at the store. And when you do, make sure you check out the list of ingredients on the wrapper – all whole foods!
Since buying my first food processor a few months ago, I’ve discovered how easy it is to make Larabars at home. This is a good thing, since unfortunately, Larabars aren’t a bargain buy. Beyond saving a few dollars, homemade Larabars are also incredibly simple to make. Essentially, you just pile everything into a food processor, shape the sticky mixture into bars, and there you have it!
I recently found some very tasty dried pineapple in the bulk bins of my local Wegmans, and instantly knew the sweet dried fruit was destined for a new Lara(Lizzy)bar creation. Sure, the addition of white chocolate chips results in a slightly less ‘whole’ foods bar, but I’d say they get an E for Effort. Enjoy!
Pineapple White Chocolate Chip Lara(Lizzy)bars
Makes about 10 (2×4-inch) bars
- 1 1/3 cups raw cashews
- 1 1/2 cups pitted dates
- 1 cup dried pineapple
- 1/4 cup white chocolate chips
In bowl of food processor, pulse cashews until finely chopped; pour into small bowl and set aside.
Combine dates and pineapple in food processor. Pulse until thick, sticky paste forms. Add chopped cashews and white chocolate chips; pulse until combined.
Spread mixture onto parchment paper. Shape into desired size. Use sharp knife to cut into bars.
