Who am I kidding? This is no oops! I created this with full intention.
So I may have a Funfetti addiction. There are worse things in life, right?
Last weekend, after restocking my Funfetti inventory, I decided to dabble in Funfetti fudge making. I wasn’t sure what would happen. Would the cake mix ruin the fudge? Would you be able to taste the Funfetti? No and yes, respectively.
Two things you should know about these: these are softer than your typical fudge, (which in my opinion, makes it super easy to eat two to three at once) and the Funfetti flavor intensifies over time (aka, three-day-old fudge bites > day-of fudge bites).
Makes about 2 dozen Line an 8-inch square pan with waxed or parchment paper. In a medium saucepan, stir condensed milk and white chocolate chips over low heat, until melted. Immediately stir in cake mix, and spread into pan. Chill about 1 hour, until fudge is soft set. Spread sprinkles into a shallow dish. Scoop tablespoon-sized portions of fudge and roll into balls. Coat each ball with rainbow sprinkles, then place on waxed or parchment paper until set.
