I never ate cream cheese until I was 20 years old. I still can’t eat plain cream cheese on a bagel (Philadelphia Whipped Cinnamon Sugar is the way to go). I won’t eat cheesecake, though I will make it for others, because it’s fun. But, I will eat ‘cheesecake’ bites. What are ‘cheesecake’ bites, you ask?
Those are ‘cheesecake’ bites. You only need four ingredients to make these little guys. And you don’t need to turn on an oven. Perfect summertime dessert? You betcha. Graham cracker crumbs, cream cheese, strawberry jam, and white chocolate chips. That’s it!
To add to the fun, you get to use your hands to mix up the crumbs, cream cheese, and jam. It all binds together quite easily! For added strawberry flavor, add in a teaspoon of strawberry extract.
Roll the mixture into 1 to 1 1/2 inch balls, and refrigerate 20 minutes.
Dip ‘em half way into melted white chocolate, and that’s it!
No-Bake Strawberry ‘Cheesecake’ Bites
Makes about 10 bites
1 cup graham cracker crumbs
4 oz. cream cheese, softened
2 tbsp. strawberry jam
1 cup white chocolate chips
Use hands to combine graham cracker crumbs, cream cheese, and jam.
Form into 1 to 1 1/2 inch balls, and place on a cookie sheet lined with waxed or parchment paper. Refrigerate about 20 minutes.
In microwave-safe bowl, microwave white chocolate chips (about 60 seconds) stirring until just melted. Dip each ball half-way into white chocolate. Set on parchment paper, allowing to set before removing. Store in refrigerator.
