Blueberry-Peach Banana Soft Serve

Well, I think it’s safe to say late summer heat has made for a steady supply of overripe bananas.  It seems my bananas can’t last more than a day or two without taking a turn for the other side.  I have no problem with this though – remember these?
Not sure what else to do with overripe bananas, I popped a few in the freezer.  Then I decided to give banana soft serve a try.  It’s all over blog-land lately, and I was pretty curious to find out what the hype was all about.  
I grabbed my handy Magic Bullet and I was ready to get whippin’.  I began by whipping up the frozen bananas with some frozen peach chunks, because if there’s one thing you should know about me, it’s that I can’t stand to prepare any sort of recipe without giving it my own twist.
As the mixture started to become soft-serve-like, I popped in a handful of frozen blueberries, too.  Why not?
Spoon the soft-serve into a dish, and top it with whatever you’d like.  I topped mine with Special K Granola and half of one of my PB banana graham cookies.
It’s crazy what bananas can do.  Crazy!

Blueberry-Peach Banana Soft Serve
Makes 1 serving
1 medium frozen banana, chunked
1/2 medium frozen peach, chunked
2 to 3 tbsp. frozen blueberries
In food processor or blender, whip banana and peach chunks into light and creamy.  Add blueberries and whip until just mixed.  Top with desired toppings.
